The classic Key Largo institution is the highway fish house — most famously The Fish House at Mile Marker 102.4, the kind of place with fish so fresh the menu is whatever the boats brought in. Order it 'Matecumbe style' (tomatoes, shallots, capers, lime) or blackened, start with conch fritters, and don't skip the smoked fish dip — the Keys' true regional dish, eaten with saltines and pickled jalapeños.

Tiki docks: drink where the sunset is

Here's the local knowledge that separates Key Largo from the rest of Florida's east coast: the island faces Florida Bay to the west, so the bayside tiki bars get a genuine over-the-water sunset every clear evening. Look for the places built on stilts over the bay — thatched roofs, boats tied up at the dock rail, live music on weekends. Order anything frozen, arrive an hour before sundown for a rail seat, and bring cash; a few of the best docks still don't love cards.

Key lime pie, adjudicated

Rules for authenticity: the filling is pale yellow (never green — green means food coloring), the base is graham cracker, and the topping argument (meringue vs whipped cream) has divided Keys families for generations. Almost every restaurant on the island serves a house version; trying more than one in a day is not gluttony, it's research. Frozen key lime pie on a stick, dipped in chocolate, is the walking-around variant and it is better than it has any right to be.
